revert Merge pull request 'Apply lix.overlays.default when not using Lix from nixpkgs' (#112) from lix-flake-consistent into main

This is already breaking since it expects Lix to be a flake now rather than a path AND re-locking is apparently broken (flake=false -> flake=true doesn't lock correctly).
